Ingredients

3 large, peeled and diced Sweet potato

1/2 cup, packed Brown sugar

1/4 cup, melted Butter

2 large, beaten Eggs

1 teaspoon Vanilla Extract

1 teaspoon Cinnamon

1/4 teaspoon Nutmeg

1/2 teaspoon Salt

2 cups, mini or regular size Marshmallows

1/2 cup, chopped Pecans


Instructions

1.   Preheat the Oven:

  • Set the oven to 350°F (175°C) to ensure even baking of the

2.   Prepare the Sweet Potatoes:

  • Peel and cut the sweet potatoes into large
  • Boil the sweet potato chunks until tender, about 15-20 Then, drain and transfer them to a large mixing bowl.

3.   Mash the Sweet Potatoes:

  • Mash the sweet potatoes until smooth, then add granulated sugar, brown sugar, melted butter, milk, beaten eggs, vanilla extract, salt, cinnamon, and nutmeg to the mixture. Combine until smooth.

4.   Transfer to a Baking Dish:

  • Grease a 9×13-inch baking dish with butter or non-stick spray. Pour the sweet potato mixture into the dish and spread it out

5.   Prepare the Topping:

– In a medium bowl, combine brown sugar, flour, melted butter, and chopped pecans. Sprinkle the topping evenly over the sweet potato mixture in the baking dish. Optionally, add a layer of marshmallows on top for an extra sweet and gooey finish.

6.   Bake the Casserole:

  • Place the casserole in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through. If using marshmallows, bake until they are puffed and lightly
