Description

Australia’s scorching summers call for refreshing and light desserts. Enter Pavlova, a quintessential Aussie staple that perfectly captures the essence of the season. This meringue marvel is the centerpiece of many barbecues and celebrations

Ingredients

For The Meringue

Egg Whites: 4 large egg whites

Caster Sugar: 1 cup (200 grams)

Cornstarch: 1 teaspoon

White Vinegar: 1 teaspoon

Vanilla Extract: 1 teaspoon

For The Topping

Heavy Cream: 1 cup (240 ml), whipped to soft peaks

Fresh Fruits: Choose a mix of your favorites, such as: Strawberries, Kiwi, Passionfruit, Blueberries Raspberries

Mint Leaves: Optional, for garnish

Instructions

1- Preheat The Oven

Begin by preheating your oven to 150°C (300°F). Line a baking sheet with parchment paper and outline a 20 cm (8-inch) circle as a guide.

2- Prepare the meringue

Whip the Egg Whites: In a clean, dry mixing bowl, whip 4 large egg whites on medium speed until soft peaks form.

Gradually Add Sugar: Slowly incorporate 1 cup (200 grams) of caster sugar, one tablespoon at a time, while beating on high speed until the mixture is glossy and stiff peaks form. This process should take approximately 10 minutes.

Incorporate Cornstarch and Vinegar: Sift 1 teaspoon of cornstarch over the meringue, then add 1 teaspoon of white vinegar and 1 teaspoon of vanilla extract. Gently fold these ingredients into the meringue until well combined.

3- Shape the meringue

Spread the Meringue: Use the outlined circle on the prepared baking sheet as a guide. Shape the meringue into a round disk with slightly raised edges to accommodate the toppings.

4- Bake the meringue

Lower the Temperature: Reduce the oven temperature to 120°C (250°F). Bake the meringue for 1 to 1 1/4 hours, until it is dry to the touch and has a pale, crisp exterior.

Cool in the Oven: Turn off the oven and leave the meringue inside with the door slightly ajar to cool completely. This helps prevent cracking.

5- Prepare the topping

Whip the Cream: Whip 1 cup (240 ml) of heavy cream in a bowl until it forms soft peaks.

Prepare the Fruits: Wash and slice your preferred fresh fruits. Common choices include strawberries, kiwi, passionfruit, blueberries, and raspberries.

6- Assemble the Pavlova

Transfer the Meringue: Carefully move the cooled meringue to a serving plate.

Add the Whipped Cream: Spread the whipped cream over the top of the meringue.

Arrange the Fruits: Place the sliced fruits on top of the whipped cream, allowing for a visually appealing presentation through creative arrangement.

Garnish (Optional): For an extra touch of color and freshness, consider adding a few mint leaves.

7- Serve

Slice and serve your pavlova immediately. Enjoy the contrast of the crispy meringue, soft marshmallow-like center, and fresh, juicy fruits.
