Ingredients

Honey: 1 cup (240ml)

Brown Sugar: 1 cup (200g)

Unsalted Butter: 1/2 cup

All-Purpose Flour: 4 cups 500g

Almond Meal (Ground Almonds): 1 1/2 cups (150g)

Baking soda:1 teaspoon

Baking powder: 1 teaspoon

Ground Cinnamon: 2 teaspoons

Ground Cloves: 1/2 teaspoon

Ground Nutmeg: 1/2 teaspoon

Ground Allspice: 1/2 teaspoon

Ground Ginger: 1/2 teaspoon

Lemon Zest: from 1 lemon

Eggs: 2 large

Candied Citrus Peel: 1/2 cup (75g), finely chopped

Blanched Almonds: for decoration

Chocolate Glaze: (optional) 1 cup (200g) of dark chocolate, melted

Powdered Sugar Glaze: (optional) 1 cup (120g) of powdered sugar mixed with 2-3 tablespoons of water or lemon juice.


Instructions

Step 1: Prepare the Dough

Melt Honey and Butter: In a medium saucepan, combine 1 cup (240ml) of honey and 1/2 cup (115g) of unsalted butter. Heat over medium heat, stirring occasionally, until the butter is melted and the mixture is well combined. Remove from heat and let it cool to room temperature.

Mix Dry Ingredients: In a large bowl, sift together 4 cups (500g) of all-purpose flour, 1 1/2 cups (150g) of almond meal (ground almonds), 1 teaspoon of baking powder, 1 teaspoon of baking soda, 2 teaspoons of ground cinnamon, 1/2 teaspoon each of ground cloves, ground nutmeg, ground allspice, and ground ginger. Add the zest of 1 lemon to the dry ingredients and mix well.

Combine Wet and Dry Ingredients: In a separate large bowl, beat 2 large eggs with 1 cup (200g) of packed brown sugar until light and fluffy. Gradually add the cooled honey-butter mixture to the eggs and sugar, mixing until well combined. Slowly add the dry ingredients to the wet mixture, mixing until a dough forms. Fold in 1/2 cup (75g) of finely chopped candied citrus peel.

Step 2: Chill the Dough

Refrigerate: Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight. This allows the flavors to meld and the dough to firm up.

Step 3: Shape and Bake the Lebkuchen

Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Shape the Dough: On a lightly floured surface, roll out the dough to about 1/4 inch (0.6 cm) thickness. Use cookie cutters to cut out shapes, traditionally hearts, stars, or circles. Place the cookies on the prepared baking sheets, spacing them about 1 inch apart.

Bake: Bake in the preheated oven for 10-12 minutes, until the edges are lightly browned. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 4: Decorate the Lebkuchen

Prepare Glazes: For a chocolate glaze, melt 1 cup (200g) of dark chocolate. For a powdered sugar glaze, mix 1 cup (120g) of powdered sugar with 2-3 tablespoons of water or lemon juice until smooth.

Glaze the Cookies: Dip the cooled cookies into the chocolate glaze or brush them with the powdered sugar glaze. Place blanched almonds on top of the cookies for decoration, if desired.

Let the Glaze Set: Allow the cookies to sit until the glaze is set and hardened.

Step 5: Store and Enjoy

Store: Store the lebkuchen in an airtight container. They will keep for several weeks, and the flavor improves over time.
