Ingredients

For The Fish

4 white fish fillets (such as cod, haddock, or pollock)

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon black pepper

1 cup cold sparkling water

Vegetable Oil For Frying

For The Chips

4 large potatoes (such as Salt to taste  Russet or Maris Piper), peeled and cut into thick strips

Vegetable oil for frying

Optional Tartar Sauce

1/2 cup mayonnaise

2 tablespoons finely chopped pickles or relish

1 tablespoon lemon juice

1 tablespoon capers,finely chopped

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

1. Prepare The Chips

– Peel and cut 4 large potatoes into thick strips.

– Soak the potato strips in a bowl of cold water for at least 30 minutes to remove excess starch.

– Heat vegetable oil to 300°F (150°C) and fry the potatoes in batches for 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

 

2. Prepare The Batter

– In a bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of black pepper.

– Gradually whisk in 1 cup of cold sparkling water (or beer) until the batter is smooth. Let the batter rest for a few minutes.

 

3. Prepare The Fish

– Increase the oil temperature to 350°F (180°C).

– Pat 4 white fish fillets dry with paper towels and lightly coat each fillet in flour.

– Dip each fish fillet into the batter, ensuring it’s fully coated. Let any excess batter drip off.

 

4. Fry The Fish

– Carefully lower the battered fish fillets into the hot oil and fry for about 5-7 minutes until the batter is golden brown and the fish is cooked through. Fry in batches if necessary. Remove the fish and drain on paper towels.

 

5. Second Fry For The Chips

– Raise the oil temperature to 375°F (190°C) and fry the previously cooked chips again for 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt to taste.

 

6. Optional Tartar Sauce

– In a small bowl, combine 1/2 cup mayonnaise, 2 tablespoons finely chopped pickles or relish, 1 tablespoon lemon juice, 1 tablespoon finely chopped capers, and 1 teaspoon Dijon mustard. Mix well and season with salt and pepper to taste. Set aside.

 

7. Serve

– Serve the crispy fish fillets alongside the golden chips.

– Offer optional tartar sauce, lemon wedges, and malt vinegar on the side for added flavor.
